Smoked Cornish Hens, Jack Daniels style! This recipe provides a sweet, juicy chicken that bursts with flavor. I highly recommend smoking with Jack Daniels Wood Chips. They are made with wood from old oak whiskey barrels and provide a very clean sweet tasting flavor that is not overbearing.
Preparation time: 15 minutes
Cooking time: 1.5 hours baked, 45 minutes grilled, 4-6 hours smoked
Serves: 4-6 people
- 2 Cornish game hens (or 1 full size fryer chicken)
- 3oz. Jack Daniels Tennessee Whiskey
- 3oz. Orange Pineapple Juice (or Apple Juice)
- 1/2 cup Extra Virgin Olive Oil
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/2 bag of Jack Daniels Barrel Wood Chips (if smoking)
Combine whiskey, juice, 1/2 tablespoon salt and 1/2 tablespoon pepper in pourable bowl. Carefully pour mixture into injector. Inject mixture into each breast, back, leg and thigh. Rub hens with olive oil and evenly apply remaining salt and pepper.
If baking, pre-heat the oven to 350°F. Coat baking dish with non-stick spray. Place the hens in the dish and cover with foil. Cook covered for 1 hours. For the final 30 minutes of cooking, remove cover for crispier, browner skin.
If grilling, heat the grill between medium to medium-high temperature of about 300 to 400°F. Use indirect heat to grill the hens. Grilling will take about 45 minutes.
If smoking, prepare smoker and heat cooking area to 220°F. Smoke with Jack Daniels Barrel Wood Chips. Smoke for 4 to 6 hours.
Be sure your chicken has an internal temperature of 175-185°F before serving.
